Location. Listed on the National Register of Historic Places, The Fairmont Olympic Hotel in downtown Seattle, Wash., boasts Italian Renaissance architecture. Hotel Features. Decorated with hand-carved plaster work, 11 hues of yellow and a Chihuly glass collection, The Georgian boasts regional Northwestern cuisine including Tarragon Crusted Rabbit Loin and Cedar Plank Smoked King Salmon. Shuckers' seafood menu offers Dungeness Crab Cakes and Microwbrew Battered Fish and Chips. The Terrace provides specialty martinis and lighter fare accompanied by live piano music. A 12th floor business center contains computer stations and high-speed Intenet access. The property's fitness club hosts saunas, a spa tub, an indoor pool with a covered solarium and a weight room, along with cardiovascular equipment with personal DVD players.
